Yoghurt Bark

Snack time just got exciting with this recipe for energy boosting Frozen Yoghurt Bark; Greek yoghurt sweetened with honey and topped with fruit and nuts.

Greek yoghurt is a favourite in our house so naturally anything with yoghurt in it is a winner. We buy Greek yoghurt as it has one of the lowest sugar contents we can find in the supermarkets. Obviously, it is unsweetened so suitable to create kid-friendly recipes and artistic creations as the kids eat their yogurt. If your family’s yoghurt tastes are a little sweeter you may need to add something sweet to it to make it a little more appealing, we prefer natural sweeteners like honey or good quality maple syrup rather than having the refined white stuff pre-added. Of course, any yoghurt can be substituted into this recipe

We had a lot of fun making this Frozen Yogurt Bark. We let the kids choose the toppings and pretty much make this on their own with our guidance. Almost any type of fruit, dried fruit and nuts would work in this recipe and fresh berries are also perfect for decorating the top as they freeze well.


INGREDIENTS

Yogurt Bark:

500g / 2 cups Greek yogurt

2 Tbsp honey

1 Tbsp cranberries

Toppings: (the choices are endless)

1/2 cup fresh berries (blueberries are our favourite)

2 Tbsp shredded coconut

2 Tbsp nuts or seeds (we like pistachios)


INSTRUCTIONS

Mix the yogurt and honey together until well combined. Add the cranberries and stir again. Line a baking tray with foil and pour the yogurt mixture on top. Spread it depending on how thick or thin you want your bark to be. Mine was approx 1cm thick. Sprinkle the berries, coconut and nuts/seeds on top and place in the freezer for 2-4 hours or until it is completely frozen. Remove from the freezer and use a sharp knife to break the bark into pieces. The bark can be stored in the freezer for tasty snacks as required.


Alternative toppings and additions

You can also use fruit to sweeten your bark. Simply blend or crush your desired fruit and mix it into the yoghurt before spreading in onto the foil. It also gives the bark a pretty colour throughout.

Again, you can add toppings your family loves to eat. We also sometimes get a bit naughty and add chocolate chips, toasted muesli, rice puffs, chia seeds and even sprinkles to our yoghurt bark.
